Passow Catches The Madness

No, not Space Madness, CaJohn’s Bhut “Jolokia Madness”. This was part of my winnings from The Fiery Foods Festival (in particular the Chili-Head Jeopardy match) and I’m not sure if it’s available commercially yet as I can’t find it on CaJohn’s website.
CaJohn’s Bhut “Jolokia Madness” Ingredients: Bhut Jolokia, Habanero, onion, mustard, vinegar, spices.
The label is simple but eye catching and is adorned with some familiar faces (I wonder what it takes to get onto one of his labels….I’d probably have to eat a spoonful of Mongoose for that privilege). This has mustard in it so I have to throw out the obligatory statement that I am no way shape or form a fan of mustard, I don’t like the sight of it nor the taste so this is going to be a slightly slanted review because of that. I try to be as objective as possible but when it comes to mustard I just can’t do it, sorry folks.
Judging by the color of this sauce I’d have to say it’s high in mustard (ugh). Let’s give it a try. Instant sweetness of the Habanero mixes in with the Jolokia and vinegar. Then the Jolokia flavor really comes to the front. Next up is the mustard, onion, and a hint of what I believe is basil. It’s really heavy on the mustard though.
Heat level on this is pretty impressive, alternating between the back of the throat and the middle of the tongue. The Jolokia comes in with the Habaneo, gives you a hug and says, “I love you” for a good 10 seconds. Then it dies down to a low flame for the next 5 minutes.
All in all, it’s a good sauce but it has that mustard in it so I unfortunately have to rate it lower than what other people would give it. If you like mustard and Jolokia though, this sauce is for you!

No, it’s not heavy on mustard, your pre-conceived notions about that condiment is causing tunnel-tastebuds! No it is not available yet as we have not perfected it to our standards.

Pre-conceived notions? Tunnel tastebuds? If Jon doesn’t like mustard, even just a slight hint of it may bring the taste of it out. Especially when the only other ingredients higher on the list is a couple of peppers and some onion.
Jon was honest and forthcoming on his tastes for mustard, so I don’t see this as him having “tunnel tastebuds”. Just that he doesn’t like mustard.
Me, I don’t like jelly. I wouldn’t even think of tasting any kind of jelly, pepper or otherwise. It’s my personal taste, and it has nothing to do with whether it’s a good product or not. That’s the same vibe I got from Jon about the mustard. If anything, kudos to him for even trying the sauce to begin with knowing that he probably wouldn’t like it if the mustard was noticeable. Nice job Jon.
Now me, I like mustard, and Jolokias, and onions, and Habs, and vinegar, and spices. I can’t wait to taste this one. Hope you get the recipe finalized soon John, looks like a tasty treat!

I think John and DK both have solid arguments. Can one truly do a thorough and fair review of a product when they have preconceived notions about the ingredients? I turned down a review for one of Sam’s hot sauces because it contained coffee. I didn’t want to even try it because of my dislike for it. Who knows, I might love it, but I would be thinking coffee the whole time. My tastebuds being super-sensitive to coffee might be able to “tunnel” in on the flavor.
I had some products that I never would have guessed had certain ingredients in them, but if I knew in advance I might be able to figure it all out. My study in hypnosis has taught me that the brain is capable on pulling out a memory of anything and bringing it out as if it was real. Sit there at your computer and think of buffalo wings now, think about the flavor, and tell me if you can taste it now. 9 out of 10 buffalo wing fans can pull that flavor out of their memory banks and taste it now. The same could be said for mustard. Yet, all mustards are not created equal. The Annual Napa Valley Mustard Festival can tell you that. They have more categories than the Scovies.
