RedRum Sauces are ready for your consumption
Our friend and fellow chilehead Ed (a.k.a. ChileHeadEd…get it?) has a big announcement, which we are reproducing here for your reading pleasure. Try his sauces. All his sauces. Maybe he’ll even save us one of those collector’s bottles as well. That said, we’ve also added RedRum Sauces to our list of Sauce Mavens to be easily accessible from the blog sidebar. RedRum Hot Sauces are (Finally) Ready!
Well, after months (and months) of hearing me talk about my sauce it is finally ready to sell!
After the success of my first years sauce I decided to increase the amount I made in the second year. I had no idea how much more work I was taking on for myself when I planned out the project!
Anyway, In case you did not read about the first release (06 RedRum) here is my story…..
I am a chef and Hot sauce fanatic, Every year I grow a bunch of Hot Peppers in my garden, This year I smoked em with hickory Wood for 6 hours, here are some pics:




I then take the peppers, stem them and make a mash out of them and use them in my sauce!I have access to an industrial Kitchen, I am certified in sanitation and every bottle is carefully hand filled, waxed to seal and labeled.

Every year I make a new batch of “Vintage” sauces which have the harvest year on the label. When they are sold, that’s it until next year when I come out with the next batch. The peppers will be different, I may experiment with new flavors seasonings etc.
This second year I did make a similar sauce to the first years release, it is the RedRum Special sauce and is close in flavor if you liked last years! It is the sauce I put most of my own smoked peppers into. With the increase in production I included a bunch of peppers grown by the guys at the Salem Harbor Power Station, Thanks guys!
I entered the sauces in the Scovies and won three awards! One first and two seconds!
The offerings this year are:
RedRum Special Sauce:
Red Savina with my Fresh smoked peppers and a hint of sweetness, very distinct unique flavor.
RedRum Orange Habanero Sauce:
Orange Habs with a new twist…Tomatillo! This sauce is amazing on Eggs, and everything else!
RedRum Jalapeno Sauce:
Green Jalapenos, Lime juice Shallots and Garlic. This sauce took second place in the Scovies!
RedRum Sweet BBQ:
A delicious Kansas City style sweet BBQ sauce with a hint of RedRum Special hot sauce for flavor, also a second place Scovie award winner!
RedRum Spicy BBQ:
The same yummy sauce as RedRum Sweet, only mixed 50 / 50 with my RedRum special sauce, it packs a kick!
RedRum Golden BBQ:
I set out to make a Carolina style mustard base BBQ sauce and did I ever! After I got the Mustard sauce just the way I liked it…I mixed it 50 / 50 with my Orange Habanero Sauce, Man it came out tasty! This sauce won a first place Scovie award!
RedRum Jalapeno Reserve:
The same great Jalapeno Sauce kicked up with 5 million Scoville extract and 5 million Scoville crystals! The high quality extract and crystals give the sauce a punch with little to no extract flavor! Jalapeno sauce with extract, who woulda thunk? what next!
RedRum Orange Habanero Reserve:
Same great sauce kicked up with the 5 million extract and 16 million crystals, again little to no extract flavor!
RedRum Special Reserve:
On this one, I took my special sauce added the 5 million extract, 7 million extract and twice the 16 million crystals I put into the other reserves! Yet again, little to no extract flavor!

I wanted to do something different, something unique as a “collectible” limited edition to go with this release….In my first year I packed one huge bottle of sauce in a quart size beer bottle, everyone thought it was cool and on this I drew my inspiration…..
Since I offer my Hot sauce in “Vintage’s”, A wine bottle release!
The Bottles are filled with the same hot sauce as the “Reserves”
Champagne = Jalapeno Reserve, the real deal, cork, wire, foil, “The Champagne of Hot Sauce!”
Bordeaux = Special Reserve 07 Grand Cru, Cork Sealed and Wax Finished!
“Hobo wine” = Orange Habanero Reserve, Screw top, only the best!
There are 24 of each, signed and numbered.
