Ah yes, Mild to Wild Pepper Company. A hot sauce production giant owned by golden hearted, fireman and chili-head extraordinaire Jim Campbell who’s compassion and generosity is known far and wide in the industry. I’ve been meaning to do a review of some of his products and thanks to the Weekend of Fire, I have two sauces. This is one of those sauces.

Red Savina Garlic Sauce Ingredients: Red Savina Habanero, vinegar, a lot of garlic, some citric acid, a little vitamin C.

The ingredients list almost reads like one of CaJohn’s pepper puree series! This, like the label, is a simple, straight forward hot sauce. No fancy filler like carrot, no gimmicky label, just simplistic beauty. Let’s open this woozie up and take her for a test spin, shall we?

Pours out as a thick, slightly bumpy consistency and a vibrant Habanero red color. The first taste is of the intensely fruity Red Savina Habanero. Memories flood in of other Savina sauces (especially that of Cape Fear Pepper Company). Then the garlic floats over your tongue leaving that garlic breath feel which dates hate so much. There’s a slight bite from the vinegar but you won’t notice it at all when you put it on your food. The slow burn of the Savina is also here. At first it’s a slight grab where the sauce hits and then it builds to a wonderful searing heat that lingers for quite a bit.

Well, that’s one surprisingly short review but there isn’t really much else to say about this product. It’s tasty as heck, has a great label, and goes great on almost everything. Since I can’t find anything wrong with it, I’m giving out yet another coveted 10 for taste (seems like 2008 is the year for “10” worthy sauces).
