Continuing with the Australia in a Box series, we come back to Ol’ Stillmanz. I have in front of me, two very small containers of his sauces. Let’s give them a try shall we?
Ol’s Stillmanz Nagas of War Ingredients: Nagas, tomato paste, salt, brown sugar, apple cider vinegar, lime juice.
Ol’s Stillmanz Naga Fatalii Sambal Ingredients: Nagas, Fataliis, salt, jerk seasoning, apple cider vinegar, lime juice, brown sugar
Let’s start off with the dangerous sounding one, ”Nagas of War”. Usual color to the sauce, nice a red with flecks of skin and seeds floating about in the semi thick liquid. First thing to hit is the Nagas then the lime juice which I’m not sure having this much in there is a good thing in regards to the lime juice. It’s interesting to say the least but also a bit much at the same time.
Flowing in after the lime juice is the tomato paste which helps to smooth out the lime juice but still is a bit acidic in the flavors. Next comes the brown sugar which isn’t overbearing but lends a subtle sweetness to things and pairs well with the next flavor, the apple cider vinegar. If he used regular vinegar in this, I think it would have sent it over the top as a really harsh sauce so I’m glad he stuck with the apple cider. Coming in at the end is a the salt.
The heat on this is a definite creeper. It’ll take about 1/2 a spoonful to start getting the real effects of the Naga and a nice tongue numbing sensation flows over you. All in all, I’m really not sure what to think of this, I kinda like it but I kinda have some problems with it too (mainly the lime juice). I’d definitely recommend this for pizza.

Here comes the Naga Fatalii Sambal with its light brown color (due to the jerk seasoning). The citrus flavor of the Fataliis hit first and last for a few seconds then that unique taste of the Nagas hit. Following that is the jerk seasoning then the brown sugar. The apple cider vinegar isn’t that big of a taste in this and is definitely covered up by the jerk seasoning. The brown sugar makes a brief appearance along with the salt and lime juice. Over all this is very much so a Jerk Style sauce. Absolutely perfect for chicken!
The heat on this is incredible and that’s coming from a hardened veteran of heat. It’s got to be the Naga and Fatalii combo that does this (Fataliis always seem to get me). Just a little finger dip had me doing an instant hair suck and three minutes later I was mouth surfing (riding the endorphin rush). Wow oh wow is that stuff wicked! After further consideration, I’m going to have to say that this is primarily a Fatalii burn with the tongue numbing effects of the Naga helping to back up the heat. Simply astounding. The rush from this one is a good 5 minutes. I did a full spoon full after that and was one hurting unit. You guys have got to try this one!

God that Sambal sounds like its Packing some heat,Really seems like hes cracked how much fatalli to naga ratio to put in..another winner it seems from a thoroughbred sauce stable..Mister Stillz strikes again

when I sent the list of ingrediants to you I did it in the wrong order my bad.
the Nagas of war should read
nagas, vinegar, tomatoe paste,lime, brown sugar and salt.
Naga and fatalii sambal
should read nagas, fataliis, vinegar,brown sugar, salt, lime, spices
thanks for the review and I’m glad you liked them,(nagas of war was a quicky for my wing comp I hope to hold so some of the finess is missing at this point, but quite nice on chicken.
and I’d like to think the naga and fatalii sambal is one of the hottest (75%fresh pod) and still relitively tasty and “useable” sauces getting around

Sounds really good - though I clicked the link and got sent to the ebay store, where I could not find either of these sauces for sale. And those labels… at least on the ebay store - those are like from some 1980’s, high-school, designer. They need work.

I can’t guarnte which ones he’ll have up at sale at any time. I think this is actually one of his new creations. As for the label, the one posted here is the new ones. They’ve improved drastically over his old ones (which are what’s for sale on eBay). I’ll shoot him an email as to when he’s going to start selling these.

generallee check out hippy seedco eating a tbls of the NAga and FAtalii Sambal.
I sent him a bottle when we were developing it so the vid is called naga & Fatalii jamaican jerk paste LOL it was too much of a mouthfull so we pulled it back to the Sambal
