Joe is always asking me to either take more pictures for the blog, or write some more articles. Well, here was a way for me to do both! We’ve had this jar of Csigi Chili Sauce Fra Diavolo Pasta Sauce just sitting on the shelf waiting to be used for quite some time. Since we’ve reviewed this sauce already, we just wanted to find another good way to use it to make something yummy for dinner. I tossed around the idea of making a meatloaf, but at the last minute I changed course and decided to make some spicy meatballs for use with or without pasta accompaniment.

Now was the meat really moving that fast or was I drinking my wine too quickly? My vote was the wine, but then again I usually am taking pictures of my kids rather than my dinner. This was the start of it, done by mixing the meat and other ingredients in a large mixing bowl. It really is more appetizing than this picture would indicate.

Once mixed, use the ice cream scoop to put your meatball mix into the skillet for cooking. You can cook it without oil in the skillet, which I did to keep the calories down to a dull roar. Cook in the skillet until they look golden brown and are nearly cooked through. Add the sauce, stir together and you get something that looks like this:

It’s every bit as good, or better, than it looks. Brutally simple, a little spicy, and lot good…we could use this sauce for a meal like this all the time. Here’s the official recipe for those who like such things:

Linda’s “that’s a spicy meatball” spicy meatballs

2 1/2 pounds lean ground beef (I used 90/10)
2 jumbo eggs or 3 small eggs
1/4 cup bread crumbs (actually, I used pulverized Doritos)
1/8 Parmesan cheese
1 tsp Garlic Herb spice mix
1 package frozen pepper-and-onion mix, thawed
1 jar fabulous pasta sauce–>Csigi Chili Sauce Fra Diavolo Pasta Sauce (Thanks, Lars!)

Form into balls and brown (make sure meatballs are mostly done, if not all done)

Add pepper mix and sauce and simmer for 20 minutes

This can, of course, be made super spicy by using a spicier spice mix or finely ground hot peppers of your choice. I just needed to make sure our kids could eat it. :)

Yum! In fact I’m making Pork Braciola tonight using this very same Fra Diavolo!
