What better way to kick off a week full of the glory of mango than to return to the Peppermaster products to sample some of what they can do with mango. All I had to work with was a 45mL bottle (a fairly small amount for someone who consumes hot sauce at the rate that I do), but I was bound and determined to make this sauce do my bidding. Seeing the 9 flames (out of a possible 10) on the front of the jar also piqued my interest as well. Just seeing the list of ingredients gave me some clue of the quality that lay within the bottle:

Ingredients: fresh mangoes, apple cider, onions, sugar, fresh ginger, fresh chilies, guava jelly, fresh garlic, banana peppers, pineapple, vinegar, spices

Notice that the words “red savina” aren’t actually used? I guess those must be one of the fresh chilies. Speaking of fresh, it heartens me to see that descriptor when looking at any hot sauce. It gives me hope that the makers aren’t just pouring out heaps of stale ingredients into a hot sauce which is their labour of love. That said, I took a gander at what this sauce looked like out of the bottle:

It’s a finely blended orange-coloured sauce full of all-natural ingredients that simply exudes mango aroma…plus a little spice & chinense overtones for good measure. A rather nice smelling sauce…sorta like a holiday potpourri mix, if you dumped some red savina mash on it. ;)

Taste: At first taste, I thought the Peppermaster had gone mad. 9 Flames? The up-front taste is very mango, sweet and a little tart. My initial thought was “this is sooo not hot!

Then the heat came…with some serious flame.

I’m here to tell ya, this is definitely a habanero sauce. For as sweet as the initial taste is, its diametric opposite is the heat that follows…and is worth every one of those nine flame marks on the jar. For a sauce that finishes this hot, its taste is pretty darn good as I can discern the ginger and a little pineapple with each taste. Great flavour profile!

For a sauce that I liked so much straight, pairing this with food presented a little bit of a challenge…both from a taste and heat perspective. Pouring this right into my soups and chili didn’t quite work, as the mango flavour didn’t really jive with that of the soups/stews themselves. Where it did well was pouring it over meat or using it as a dipping sauce. I even used this like a preserve while drizzling some of this over my cream cheese-covered bagel halves. Now that was a breakfast worthy of a chilehead!

On a side note, it was this sauce which was my biggest “gotcha” for anyone that tried it. More than a few people were willing to try it at work, but the dichotomy of pleasure and then pain that followed was a sight not to be missed.

Overall recommendation: Another quality sauce from the Peppermaster! While having notable heat and great mango flavour, you may need better luck pairing this sauce with foods at your dinner table. Still, it’s a great mango sauce which offers a combination of heat and taste that are notably absent in many other fruit-based hot sauces. You might want to consider getting a bigger bottle, though. This one won’t last long with us. Enjoy!

I can’t believe you didn’t notice the vanilla!

Soup? it’s a sweet not a savoury… try a thai style soup, then add it. Also, Carrot soup loves it.

Ideas for use??? Coconut shrimp, mango chicken, ice cream, Dark German chocolate cake, as a dip for Oreo cookies (my personal favourite).
