
”Blue’s Habanera Reserve” Ingredients: Cayenne peppers, Chili peppers, crushed dried Red Savina Habanero peppers, cider vinegar, tomato, course Black Peppers, salt, sugar, and lime.
A bunch of chili-heads over at The Hot Pepper were lucky enough help perfect this sauce. Once all the advice was in, we received the final product (minus the label because that is currently being reworked).
Blue’s Habanera Reserve is one heck of a sweet heat sauce. With its blood red color and prominent sugar flavor, this is a very versatile sauce. Goes just perfect on Chinese dishes and seafood, such as Swordfish and Tuna. Also amazing on some sticky rice or Sushi.
Along with the sweetness, there is a nice blend of pepper and tomato taste. The sharpness of the Cayenne is present, the fruitiness of the Habanero compliments the sugar, and the tomato appears somewhere in between those two. The black pepper makes a very small appearance on the palate and the lime finishes it off nicely.
This has a very solid heat but is not overpowering which is surprising considering the use of Red Savina peppers and the ever present seeds. The warmth lasts about 15 second depending on your rate of consumption. While this is not commercially available yet, it will be soon!
