Scotty B’s DEVIL’S DROOL

INGREDIENTS: vinegar, red habanero peppers, lemon juice, water, sea salt, garlic, cornstarch and spices.

DEVIL’S DROOL is not the most appetizing of names, but it is apt. This stuff is hot, hot, HOT! As a matter of fact this may be the hottest non-extract sauce I have ever had, including my own crazy concoctions. It burns your mouth and the burn lingers for a while. I have no idea what the Scoville rating on this sauce is but I would say, just from the way it burns me, that it’s comparable to Dave’s Ultimate Insanity, which claims to be 50,000 SHUs.

Aside from being real dang hot, this sauce has a great taste. The label proclaims “Southern Style” and it’s a vinegar-based sauce. The first ingredient on the label is vinegar and the second is red habaneros. There’s no “base”, like carrots or tomato so the habs are the base. That is where the powerful natural heat comes from.

Scotty B’s DEVIL’S DROOL has a wonderful vinegar/habanero flavor. Think of the best Louisiana-style sauce you’ve ever had and multiply that by 20 and you’ll have an idea what this sauce is like. It’s really tasty and REALLY hot. Lately I have been building up an intolerance to extract…it does awful things to my stomach and I just don’t like it’s chemical taste. It’s great to have a bottle of this in my fridge for when I want something really hot that won’t make me feel like I’ve been kicked in the stomach.

As you can see from this picture, this sauce has a nice, deep orange color and is a bit on the thick side. The aroma is vinegar and “hot”. As my wife often says, it “smells hot”. After a nice size dollop on tortilla chip my mouth burns for a good 10 minutes, mostly on the tongue. My nose starts to run a little too; a sign of serious heat.

If you enjoy the old school taste of a “Louisiana-style” vinegar-based sauce but want some seriously mean heat then this is your sauce.
