Our next homemade hot sauce review comes from our very own Chuk Hell. Chuk is a proud Austin-ite and virtual renaissance man, and this sauce is but one of several he creates on a regular basis. Chuk may consider this a “B” sauce, but our esteemed reviewer, CaJohn, thinks otherwise.

Title: Chuk Hell’s Roasted Habanero Sauce with Whisky & Honey

Ingredients: habaneros, garlic, onion, carrots, honey, whisky, lime juice, salt, pepper

CaJohn’s take:

The first thing I have to say about this sauce is… It is definitely a
Chilehead’s sauce! It delivers great heat and flavor. Of course, one of
the tests for any good sauce is how to use it beyond the given role of
a condiment. Roasted Habs, Whisky & Honey, all in the name of the
sauce. Mmmm what to cook with it? Pork of course! Using it both as a
marinade & a glaze. Butterfly pork loin chops for the first test., add
just a little more whisky (Bourbon of course) and let these babies soak
overnight. Fire up the grill and get these chops cookin’. Finish them
off with a glazing for the last couple of minutes, Man, talk about good
eatin’! Just a wonderful sweet-hot glow emanating from both the meat
and yours truly. Very, very good. I almost forgot it was a hot sauce.

Next for a little different use, again on pork. I like to glaze my
bacon, I finish it up with a little sauce. Kind of a fiery twist to a
BLT. Again this sauce proved to be a perfect choice. Habs & pork,
forget the applesauce. Not to leave fruit out of the picture
completely, I tried it as a compliment to my fresh fruit salsa. Take
any fresh fruit you like and dice it sort of finely, Toss with chopped
green onion, jalapeno and cilantro and a bit of hot sauce as a
dressing. This was awesome as well. The roasting of the habs helps to
bring out their sweetness by caramelizing the sugar in them. I think
this is one of the best representations of habs & whisky I have ever
tasted. The flavors meld well, and the honey is represented in the
background flavors.

Of course this sauce is great as a condiment as well. It was quite nice
on a fried smoked sausage sandwich. As i said earlier, I like to cook
with sauces. As a sauce man, I need to demonstrate it’s not just for
using like ketchup. This one passed the mark with flying colors, Great
Job Chuk! Sorry Joe & Linda, there is very little left, and I’m keeping
it to myself.

What?! We don’t get any of it back?! Now that’s not very fair, is it? We did taste a little before we sent it out for its review and we concur with CaJohn about the taste. It’s outstanding, and the habanero kick would please just about any chilehead. Thanks, Chuk!
